I'm working up my resume and I'm not sure what to do about my pen name. At the top, do I list my pen name, real name, or both? (My pen name is actually my maiden name, so I could list it in the middle, but I want to use it as my first name when I write)

From what I understand, you write using your real name and once you recieve a contract for your book, you then list your name as you want it to appear on your book, aka pen name.

Is the problem that you want to take credit for things you have published under your pen name? If so, and you want to list books or articles you have published under that name I would just say "writing under [Name] and then the list.
