Why is formal poetry so unacceptable to publishers today

Aside from, (or in addition to), the opinions I sent you via PM, I'd suggest you take a CLOSE look at what they DO publish and form your own opinions accordingly. I think you'll find that you've answered your own question.

Stephen Fry said in his "The Ode Less Travelled", that he did not write poems for puplication but for pleasure. In the end one must decide what you want to do with your poems and if for pleasure, like mine, you won't care.

I think the reason depends in part on the venue, though that might just be for speculative poetry. At any rate, time and again I see "Ack, we've seen so much doggerel with forced rhyme that we're now allergic to traditional forms of poetry".
At any rate, I sold a sonnet to Coyote Wild... :)
