I hate to be a wet blanket but unless someone here has some powerful connections with a Traditional Publisher or University Press, the chances of getting a book of Poetry, published that way are next to NIL.
The majority of Poets who do publish are MFAs published by their Universities or thru Book Length Contests, (also mainly University Presses) or via Vanity/POD thru such recognized scams such as Poetry.com and their brethren, and will be compared to and weighed against such, and can achieve Traditional Publication, only after they've published enough via the University Press, or Contest route to have established a reputation, (and that includes Anthologies of ESTABLISHED Poets, which are usually published by University Presses).
Moreover, (particularly if one goes the Vanity Route), you can be sure that it will cost, (probably a lot) with almost NO chance of making enough off it to cover a fraction of the expenses, and it's important to be aware that the money made by Anthologies like Poetry.com are made by selling the books to the contributers and their families.
There are exceptions to that rule, in Anthologies published by small presses, (mostly in Canada), that do absorb the costs, but they have their own agenda in what they publish.
Even Traditionally Published works do not make any profit, unless the Poet is already well known with an established reputation.
That's not saying, that the idea is necessarily bad, if the decision is made ot go ahead. as there are a lot of people here writing quality work, but the realities of the Publication World are that Poetry is a "Hard Sell" and any who participate should be aware of the real problems in doing so.
As for what to Publish, I believe, as I told William long ago, that the "Blue Rock" Collection has a great deal of merit, as it stands, (Being comparablei, in many ways, to the "Spoon River Anthology" on which it is based) and would be an ideal first choice as a vehicle for publication.
