Well, someone beat me to the punch, but the first thing that came to mind was
The Greatest American Hero (believe it or not, I'm floating on air....)
Firefly (That song grows on you like a fungus)
Twilight Zone
Star Trek
Boston Legal (I love it when they hum the song during episodes while waiting in the elevator or during the opening scene)

Friday Night Lights has really good theme music. Not sure if I think it's great because it actually is or because whenever I hear it, I think of the show and how wonderful it is.

I always have had a fondness for the theme from "Mr. Lucky", a forgettable early 1960s series, but the theme was written by Henry Mancini, and remains a staple of student jazz musicians.
