Let's begin by classifying the turkey/dressing/cranberry sauce/gravy complex as a single fully-mandated program, and remove it from consideration.

I'd have to say the highest-priority side dish is white potatoes, either baked in their jackets or mashed, because otherwise where are you going to put the gravy?

In the eyes of a true Southerner, Ms. Sofi (such as you, as Uncle Jim aptly pointed out to me), it must be argued that potatoes in any form are really nothing more than a Gravy Transportation Medium (GTM). Any GTM that can hold a copius quantity of said gravy thus is a requirement for any Thanskgiving repast.

In my own misspent youth, when the potatoes were gone I was known to slather two pieces of cornpone with the stuff, let it sit and soak for a minute, and then eat them with a spoon.

In truly dire circumstances, when even the bread had all disappeared, I'd simply upend the gravy boat into my gaping maw and swallow (eliciting squeals of laughter from my younger brother and screams of dismay from my mom).

But I digress...

Cornbread stuffing with lots of sage and onions...and gravy. I like giblet/turkey gravy just fine, but not with bits of liver in it.

Ahhh and cranberries. Cranberry/orange relish, jellied cranberry sauce, whole cranberry sauce, I don't care. I love 'em, cranberries, those distinctive-flavored, festively-colored tart little berries.

Yes, but which stuffing? In our house, anything that comes out of a box or a bag is NOT stuffing. Stuffing is 2/3 cornbread, 1/3 white bread with lots of sage, onions and celery. Period.

None of this Yankee oyster stuffing stuff for us, thank you no.

That's too much. LOL Hapi is serious about her Thanksgiving.

Pasteles is my favorite. But with chicken, not pork butt.

Pie. Pick a pie. Any pie. I'm not fond of pumpkin, but I'd just about kill anyone for a great piece of chess pie or mincemeat pie.

ETA--Imagine that. Williebee and I are on the same page as usual.

Thanksgiving at our place always, always starts with gumbo. Crab, oyster, fish sausage, and shrimp. Om nom nom nom. It is the bestest. Pass the saltines, baby.

Thanksgiving morning starts with either orange sweet rolls or sticky buns, and really good coffee. Which morphs into Irish Coffees, at some point about mid-morning...

Stuffing, made from breadcrumbs, with sage and onion and turkey stock.
Turkey gravy - home made ' with stock made with carrots, onions, celery, roasted turkey bits, left to simmer on back burner.

Yum

Plus, roast tatties.
