Really simple avocado spread

Take the contents of a ripe avocado or two and place them in a ziplock bag. Add 1/8 to 1/4th a lemon, including some pulp, and mash it all up together (you can add lemon to taste, but don't skimp if you will be storing the leftovers)

If you like guacamole, add some spices of your choice.

Cut a hole in a non-zippy corner of the ziplock and press the spread onto bread, crackers, whatever. Makes a great toastie in the toaster oven.

Fold the edge over and clip to store in the fridge for up to a day.

This worked great for me as I can never eat a whole avocado at once

Looks tasty. Does it work with just lemon juice or do you recommend the real lemon?

How long does a cut lemon last? Cover it with plastic wrap and refrigerate?

ETA: I could also see this working as a good sandwich spread. I've been using pesto sauce on my sandwiches lately and could use a change.

I always recommend the real lemon, along with organic ingredients

Cut lemon lasts on the counter for a few days, just put the cut end down on a plate. You might have to trim if it shrivels. Or hide it in the fridge (and/or cover) on the first sight of a fruit fly.

Yeah, I've been thinking about this on sandwiches. It certainly seems to be the right taste for it. I'm gonna try it on chicken or leftover sliced steak

There's a sandwich shop by me that does a really good sandwich with wheat bread, turkey, avocado slices, sprouts, tomatoes, red onions, and their "secret goo" (mayo based spread). Maybe I can come up with my own version.

For whatever reason I find mayo a sick bastardization of food. So any substitute for mayo is good for me

And I whipped up another batch and had it on a steak (slices) sandwich. The steak was cooked with oregano and garlic, and over the avocado spread I sprinkled a little parmesan. It was so good, and the parm added a nice sharp flavor.

Forgot to post - I tried this the other day on a chicken sandwich and it tasted great. The lemon gives the avocado some zip.
