Avoid food poisoning. That means either pack things in ice or take things that last longer without refrigeration, or picnic in a place where you can grill things. If your stuff is refrigerated prior to packing and the air temperature is never over 40 F, then just about anything is reasonable.
Over 40 F, Almost anything that is not soggy can be wrapped in a bread dough and baked. The baking sterilizes the food on the inside and the complete dough will greatly increase the length of time that bacteria will take to get to pathogenic quantities. Call them empanadas or pasties, whatever. I call them lunch. Fresh fruit is better than a fruit salad.
