there is a lot of evidence to suggest that less refined carbs can make meat and fat less an issue (no, I'm not an Atkins guy, but a moderation guy--we sure as hell didn't evolve in the presence of cane sugar and refined flour)....

that said, gravlax is very good, so is anything shrimpy....



edit: sorry--the above was sort of a drive-by post as I was doing other things....diced shrimp flash-fried in a sauce of blended tomatoes and either chipotle or guajillo chiles is very good, as are zucchini tacos with onions, chorizo, and chipotles. Escabeche is a great way to do fish, so is ceviche (I like the "pico-style" rather than the thick, sauced types of ceviche). I love hummus, and you can put almost anything you like into that.

My favorite new snack, from a Better Homes recipe I recently made, is unsweetened applesauce (buy organic for even better benefits), with a couple sprinkles of apple pie spice.

I don't even notice the lack of sweetness with the spices mixed in! Yum...

I love broccoli. I just boil it, and then eat it. Sometimes I dash a little sea salt on it, but rarely. I also really like brussel sprouts. And chick peas. And whole grain bread.

What works for me--adding chopped jalepeno to veggies or low fat cream cheese. Someday I'll be really creative and put it in melted dark chocolate, refrigerate it, then break it into pieces (choc.bark w/ a kick).

Oh, please, don't boil it. Boiling is about the worst way to cook any green vegetable. Takes much of the major nutrients right out of it. Either steam or (gasp) microwave it. Despite what you might hear from foodie purists, the microwave is a really good way to cook a lot of green veggies, as doing so retains all the essential nutrients.

And nothing green much beats fresh garden broccoli, just cut and eaten within about 15 minutes.

Which observation goes for anything grown in a garden. Last night I had snap peas, snow peas, asparagus peas, chopped kohlrabi and zucchini, straight from the garden, stir-fried with some thinly-sliced beef, over rice. Major good.

Yes. And when microwaving just add a bit of water and cover tightly with plastic wrap. Nuke it for only a few minutes.
