Boring leftover chicken. So I stared at a recipe for Potato Nachos and made nacho shredded chicken with peppers and cheese over sliced potatoes. Spices: salt, pepper, garlic, chili powder, paprika. It was devoured. :yessmiley

Yesterday was grilled pork chops with roasted broccoli and pumpkin pasta ravioli with pumpkin filling. Today will be grilled steaks with roasted Brussels sprouts and pearl onions, with either stuffed roast pumpkin or rice and quinoa as the side.

Chicken "curry," made with leftover rotisserie chicken & the onion, eggplant & apple I got at the farm stand yesterday. (This will probably be dinner & lunches for much of the week.)

Boring leftover chicken. So I stared at a recipe for Potato Nachos and made nacho shredded chicken with peppers and cheese over sliced potatoes. Spices: salt, pepper, garlic, chili powder, paprika. It was devoured.


One of the best things to do with boring leftover chicken is Coronation Chicken.


Or, what we're having tonight, Chicken Wonderfulness:

Dredge chicken in flour, salt and pepper and fry in some oil. Saute a chopped onion.
Add chicken broth and some sherry.
Add garlic powder.
Add chopped potato and mixed vegetables.
Cook until it's all done and the potatoes are soft. Add extra flour to thicken it to your liking.
Take it off the heat and stir in sour cream

Eat with crunchy bread.

The proportions are really up to the cook. I made up this recipe so never bothered to write down amounts but I always make a lot so use 2 pounds of mixed vegetables (green beans, carrots, sweet corn and peas for non-USAians), 32 ounces of chicken broth, a cup or so of sherry, four potatoes and between 12 and 16 ounces of sour cream. And lots of garlic powder. I LIKE garlic!

Speaking of chicken...

...drumsticks and mixed veggies.
What we're having for dinner.

I brown the chicken, then add a can of condensed french onion soup
and let it all simmer for about an hour on very low heat. Baste occasionally.
The soup cooks down to a thick sauce.

Pressed duck at a local Chinese place. Unfortunately, the batter wasn't cooked all the way through/too much batter and the gravy was bland. :(

Pork tenderloin slow cooked in apple and orange juice, crushed garlic, a touch of soy, and orange blossom honey. With roasted baby gold potatoes and onion. Might roast some tomato too.
