Before I get started on explaining I'd like to specify that this is about the Police Nationale in France and the year is 1989.

I have two cop characters in my story, one holds the rank of Gardien de la paix. The other I need to be their superior and have regular interaction with. He's 31 at the point of introduction in the story. Let's assume he started his police schooling right out of high school.

I'll be happy to give any more information you need! Thank you!

I bought the Howdunit Book of Police Procedures & Investigation: a guide for writers about a year ago and it was well worth the money (less than $10 for the kindle version on Amazon). Some of it's a little out of date, and it doesn't go in-depth into any one aspect, but it covers a whole bunch of basic stuff for just about any agency you can come up with- state and local PD, FBI, etcetera. It's a really good overview of jurisdiction, who does what, what the difference is between marshals and sheriffs, various rank systems, and basic police procedures like interviews.
