This was the result of one of my sometimes infamous WhoDunIts. There are no exact measurements as it's all based on taste and preferences.
For a small batch:
2 cans of sweet corn
1 large can of diced stewed tomatoes
1 small can of Rotel Chilis and Tomatoes (if you like a little more heat, use the hot)
A couple of diced potatoes
Salt & pepper to taste
Put it in a crock pot and forget about it for the rest of the day. When it's done, add a large bag of cheddar cheese, the sharper the better. Serve with tortilla chips.
Optional additions:
diced chicken (I prefer white meat, but dark will work too)
diced onions
diced bell peppers
a habanero pepper
vegetable broth
diced sweet onion
diced bell pepper
