Mini Molten Chocolate Cakes

This next recipe was found on the Pioneer Woman's recipe section. It was originally created by brandielle.

Quote:
Prep Time 15 Minutes
Cook Time 13 Minutes
Difficulty Easy
Servings
Ingredients
  • 4 pieces (squares) Semi-sweet Baking Chocolate OR any other dark chocolate (As Truelyana did)
  • ½ cups Butter
  • 1 cup Powdered Sugar
  • 2 whole Eggs
  • 2 whole Egg Yolks
  • 6 Tablespoons Flour
  • 2 cups Real Whipping Cream (OPTIONAL)
  • 2 Tablespoons Sugar
Preparation Instructions

Preheat oven to 425 degrees.
Spray 4 custard cups with Pam and place on cookie sheet or butter cups (as what Truelyana did)
Microwave chocolate and butter in large bowl on high for about 1 minute, until butter is melted. whisk until chocolate is also melted.
Stir in sugar until well blended. Whisk in eggs and egg yolks. Stir in flour.
Divide between cups.
Bake 13-14 minutes until sides are firm and center is soft. Let stand 1 minute.
Invert cakes on dishes and top with whipped cream, ice cream or custard (is what Truelyana did again )
Recipe taken from http://thepioneerwoman.com/tasty-kit...hocolate-cake/

I have created these on two counts now, and I admit my second time didn't turn out as molten as I had expected, but nonetheless it was a good treat! The first time it turned out perfect and the middle was gooey. Second, not as gooey but still tasteable!

My result a day late, ate with custard! Can you see the missing goo there. (It hardened over night-but still as yummy) You can even make a big cake out of this, but its best eaten straight after so if you have chocoholics near, even better.

Has anyone made anything similiar to this before, or the exact thing? What do you think of it?

I've wanted to try the lava cake recipe but haven't had any soy free chocolate to try it with.

Let me know when you do have.
Is it difficult to get soy free chocolate where you are? Or no hassle at all?

Very difficult. I either have to drive 3 hours there to a shop that sells it in northern utah and 3 hours home or I have to order it over the internet at 8 dollars a pound plus 20 dollars s+h.

And I will when I make them.

That's a shame, that it is that far. I hope that when you do get it, that it is a whole batch to last you for a while. I like soy free chocolate too. I used to eat it all the time as a teenager.

I do these, with a slightly different recipe, in little heart-shaped ramekins for special occasions.

(Oh, and if you're up for something interesting, try using Mayan Dark chocolate. )

I like that, the heart-shaped ramekins idea. Sounds very special.
I have been using dark chocolate from Ecuador - a special kind too.
