Oven-Poached Sausage

Straight from the freezer and ready for the grill in about an hour, without firing up the stove.

Pour a cup or so of your favorite poaching liquid (water, beer, broth, etc.) into a shallow covered oven-safe dish. Add your favorite fresh link sausage, thawed or rock-hard frozen. Cover and place in a cold oven. Set the oven to BAKE (not PREHEAT which lights the upper burner or element and might cause glass lids to shatter) and bake for 45 minutes. Cool covered out of the oven for 15 more minutes. Drain off the poaching liquid. Grill or broil as desired.

If you used a CorningWare Pyroceram or VISIONS dish as in the photo, you could drain away the poaching liquid and broil them uncovered in the same dish. You can even poach them in advance and keep them in the fridge for up to 2 days.
