On numerous occasions I've eaten the skillet meals at Village Inn restaurants, and found them satisfactory. A while back, I decided to try cooking a similar thing at home.
It is easy, and works very well. I garden, and have now a big pile of potatoes, among other things. Tonight I decided to use up some of those in a skillet-style dish. Plus I had a variety of other veggies in the fridge:
Chop a sufficient quantity of potatoes to feed however many people necessary; for me, tonight, it was just me and by son.
Half an onion, chopped relatively fine.
One jalapeño pepper and one serrano pepper, de-veined and de-seeded, chopped fine.
Two tomatillos, cut relatively fine.
Five crimini mushrooms, sliced.
Sautée in a small amount of olive oil, with some ground pepper and southwestern-style seasonings I happened to have in a small grater obtainable at almost any grocery.
When the potatoes begin to soften, fry two eggs apiece in butter, for putting atop the veggies at mealtime. When eggs are done, you're ready to plate things up and eat. The mix turned out just right spicy for the two of us, but for those with less industrial-strength palates, you might want to use a bell pepper or something else. In any case, it was quite a delightful meal. A bit of preparation time involved for the vegetables, but the cooking is ridiculously easy. I've also used sliced sausage in these kinds of dishes, and it's very good as well. Ham, turkey, chicken, all would go nicely, too.
Then, eat while watching pro wrestling and drink a wee snifter of decent Scotch whiskey. Or not.
