I have found two writing contests for children's stories (Highlights and Pockets); however, I was wondering if anyone had any other resources...

Of course, that's for novel length manuscripts, not short stories. My local writers guild has annual contests, and usually one of the categories is juvenile. I assume they mean 'for children', not just a page of fart jokes. But you might look into any large writing groups in your area. At least it's some cash, if not a great credit. And check out the SCBWI.
